THE Best Halloumi Burger

Serves 2

2 Brioche Buns, toasted

1 Block Halloumi, sliced lengthways

1/2 Red Pepper, sliced

1/2 Yellow Pepper, sliced

Handful of Watercress

Tbsp Harissa Paste

 

For the Hummus

1/2 can Chickpeas

Tbsp Tahini

Tbsp Olive Oil

1/2 Tsp Ground Cumin

1/2 Tsp Ground Coriander

Pinch Salt & Pepper

This burger is our go-to recipe for Meat Free Monday, almost every Monday as it's that good! Served with these spicy, sweet potato fries, it's a real treat. We like to add a little salad on the side to complete the meal.  Give it a go, you won't look back and may even choose to make this

instead of a meaty burger,as

it really is that good!!

Halloumi Burger

For the Sweet Potato Fries

1 medium Sweet Potato

2 Tbsp Olive Oil

1 Tbsp Ras al Hanout Spice Blend

Pinch Salt.

Preheat the oven to 220C/Gas Mark 7

Start by quickly making the hummus. Place all the ingredients into a food processor and blitz for a few seconds to combine everything to a spreadable but chunky texture. Set aside.

Next, make the fries. Slice the sweet potatoes into 1cm sticks and place in a bowl. Add all other ingredients and toss until the fries are fully coated. Spread out evenly on a baking sheet ensuring they dont overlap too much. Place into the hot oven for 12 minutes.

While the fries are cooking, place a non-stick pan on a medium to high heat and add a little olive oil. Add the peppers and cook until they start to char nicely. Place the halloumi into the pan and fry for 3 minutes on each side. Spread 1/2 of the harissa paste onto the bottom half of the brioche bun and 1 tbsp of the hummus onto the top half. Place the peppers on top of the harissa, followed bby the halloumi. Top with watercress, place the lid on and serve with the sweet potato fries and a nice pile of salad!
